Parmesan Shrimp and Mushroom Pasta


4 oz. angel hair pasta

1 lb. large shrimp, peeled and deveined

4 T. butter

1/2 C. diced red bell pepper

3/4 C. sliced mushrooms

2 cloves garlic, minced

splash of white wine

3/4 C. half & half

1/4 C. grated parmesan cheese, plus more for serving

Cook the pasta in boiling water until tender. Meanwhile, melt the butter in a large skillet over med. high heat. Add the peppers and mushrooms and cook for 5 minutes, stirring often. Add the garlic and cook a minute more. Add a splash of wine and the half & half, stir to combine. Toss in the shrimp and cook for 4-5 minutes, until pink. Stir in the parmesan cheese. Turn off the heat to the skillet,drain the pasta and add to the skillet, tossing to combine all the ingredients. Sprinkle with more parmesan cheese when serving.
