Crispy Hash Browns


2 medium potatoes, peeled and rinsed

1 T. bacon grease

2 T. butter

1/4 C. chopped onion

salt and pepper to taste

Grate the potatoes using a cheese grater into a bowl. Cover them with water and let them sit for 15 minutes. Drain the water from the bowl and place the potatoes on a clean dishtowel and blot them dry. Heat the bacon grease and butter in a medium skillet over med. high heat. Once melted and the pan is heated add in the potatoes and flatten out in the pan with your spatula. Sprinkle the onions over the potatoes. Allow them to cook for 6-7 minutes till nicely browned then gently flip them over and cook and additional 5-6 minutes. Season with salt and pepper to taste.
