Open Face Meatball Sandwich
1 lb. ground beef
1/2 lb. ground pork
2 cloves garlic, minced
1 large egg, beaten
1/2 C. italian breadcrumbs
1 tsp. onion powder
1 tsp. italian seasoning
24 oz. jar marinara sauce
hoagie rolls
shredded mozzarella cheese
grated parmesan cheese
Combine the first 7 ingredients in a bowl by hand. Pinch off some of the mixture and roll into a ball a little smaller than a golf ball. Place in a large skillet. Repeat with remaining mixture. Cook over med. high heat, turning to brown on all sides (you are not cooking them through at this point, just browning). Once browned, drain off the excess grease and add the marinara sauce. Lower the heat to low, cover and cook for 35 minutes, stirring occasionally. When done, slice 1 hoagie roll in half and top with a little mozzarella cheese. Pop in the microwave for 15 seconds to heat the roll. Add some meatballs on top of the cheese and then spoon some of the sauce over them. Sprinkle with parmesan cheese before serving.
NOTE: After browning the meatballs you can put them in a crock pot, add the sauce and cook on low for 2 hours.
