Broccoli Casserole
12 oz. frozen chopped broccoli
1/2 C. finely chopped onion
10.5 oz. can cream of mushroom soup
1/4 C. half & half
1/4 C. mayo
2 large eggs, beaten
1 C. shredded sharp cheddar cheese
1 1/2 C. crushed buttery round crackers
1/2 tsp. my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
2 T. butter, melted.
Put the broccoli and onion in a microwave sage mixing bowl. Microwave for 3 minutes. Stir in the soup, half & half, mayo, eggs, cheese, seasoning and 1/2 C. of the crushed crackers. Combine well. Pour into a lightly greased 2.5 qt. casserole dish. Bake in a 350 degree oven for 45 minutes. Combine the remaining crackers with the melted butter. Top the casserole and return to the oven for 7-8 minutes till golden.
