Savory Meatloaf

1 lb. ground chuck

1/2 C. diced onion

1 clove garlic, minced

1 large egg, beaten

1/4 C. ketchup

1 1/2 T. soy sauce

1 tsp. prepared horseradish

1/4 tsp. pepper

1/4 tsp. smoked paprika

3/4 C. plain breadcrumbs

Combine all ingredients in a bowl by hand. Place in an 8x8 baking dish and pat out. Bake in a 350 degree oven for 20 minutes. Remove and brush top and sides with topping (recipe below) and continue baking for an additional 25 minutes.

Topping

1/3 C. ketchup

1 tsp. yellow mustard

1 tsp. honey

1/2 tsp. prepared horseradish

1/8 tsp. smoked paprika

Whisk together to combine well.
