Batter Fried Shrimp


1 lb. large shrimp, peeled with the tail left on

1 large egg

3/4 C. half & half

1 T. hot sauce

3/4 C. self rising flour

2 T. cracker meal

1/2 tsp. smoked paprika

1/2 tsp. cayenne pepper

1/2 tsp. garlic powder

pinch of salt

veg. oil for frying

Whisk together the egg, half & half and hot sauce. Whisk in the flour, cracker meal and seasonings. Heat oil in a deep fryer to 350 degrees. Take each shrimp and dip to coat with the batter, shake off excess and drop in the oil, working in batches, fry till golden brown, drain on a paper towel lined plate.
