Beef Roast Fajita Roll-Ups


1 small onion, sliced

1 C. sliced peppers (I used red and yellow)

1 T. olive oil

3 C. shredded leftover roast beef

1 pkt. fajita seasoning

1/4 C. water

4 flour tortillas

mexican blend cheese

shredded lettuce, chopped tomatoes, sour cream (for serving)

Heat the oil in a skillet over med. high heat. Add the onion and peppers and cook for 5-6 minutes till softened. Stir in the roast and combine with the onions and pepper. Add the fajita seasoning and water, stir to combine. Cook till the water has reduced, approx. 1-2 minutes. Warm the tortillas in the microwave to soften. Sprinkle a little cheese on the tortillas and divide the filling between them. Roll up and serve over shredded lettuce with some tomatoes and extra sprinkling of cheese.
