Beefy Bean Burrito Casserole


1 lb. ground beef

1 med. onion, chopped

16 oz. can refried beans

1.25 oz. pkg. taco seasoning

10 oz. can diced tomatoes with green chilies

6 flour tortillas

1 1/2 C. shredded colby jack cheese

Brown the ground beef in a skillet, drain off excess grease. Add the onion and cook for 5 minutes. Stir in the beans and combine well. Add the taco seasoning and tomatoes, with the juice. Stir to combine and cook for 5 minutes over med. heat. Heat the tortillas between two pieces of damp paper towels in the microwave for 30 seconds. Remove and spoon some of the mixture down the center of the tortilla, top with a little cheese and roll up. Place in a 9x13 dish. Repeat with remaining tortillas, you will not use all the meat mixture. Once you have all the burritos in the dish, spoon the remaining meat mixture over the top of each one. Top with the remaining cheese and bake in a 350 degree oven for 20 minutes. Serve over shredded lettuce with your favorite toppings.
