Beet Brined Hard Boiled Eggs
4 hard boiled eggs
15 oz. can sliced beets
1/4 C. sugar
1/4 C. apple cider vinegar
1/8 tsp. ground cloves
pinch of salt
Place the eggs in a glass jar or bowl. Strain the juice from the canned beets into a pot, add the remaining ingredients and bring up to a boil. Boil for 3 minutes and pour over the eggs. Seal and place in the fridge for 36 hours before eating.
Hard boiled egg tip: Cover the eggs completely with water, bring up to a boil and cover with a lid. Turn off the heat and allow the eggs to sit in the water for 17 min. Drain and run under cold water, add ice to the water and allow the eggs to soak for 4 minutes. Remove and tap each end of the egg on the counter, gently roll the egg to crack the skin and place back in the water for 2 minutes. Remove and peel the eggs.
