Fried Chicken Sandwich


2 boneless chicken breasts (1/2" thick)

1/3 C. dill pickle juice

1 tsp. hot sauce

1 large egg

1 T. water

3/4 C. all purpose flour

1 T. powdered sugar

1/4 tsp. salt

1/4 tsp. pepper

1/4 tsp. cayenne pepper

1/4 tsp. smoked paprika

veg. oil for frying

buns, lettuce and pickles

Place the chicken in a ziploc bag, add the pickle juice and hot sauce and place in the fridge for a min. of 1 hour. Whisk together the egg and water in a bowl. Add the flour, powdered sugar and seasonings to another ziploc bag. Heat 1" of oil in a skillet to 350 degrees. Take each breast and place in the flour, shake to coat then dredge through the egg mixture then back into the flour. Shake off excess and place in the skillet. Fry for 3 minutes per side and drain on a paper towel. Serve over your favorite bun with lettuce and pickles.
