Spinach and Fruit Salad with Cilantro Lime Dressing


1/2 C. olive oil

1/4 C. rice vinegar

1/2 lime, juiced

1 T. sugar

1/8 C. fresh cilantro leaves (parsley can be substituted)

Place all ingredients in a mini food processor and pulse to combine well and break down the cilantro. Place in the fridge till ready to use.

2 C. fresh spinach (per person)

sliced strawberries

fresh blueberries

sliced jicama

feta cheese

Place the spinach in a hot skillet and toss for 30 seconds, just to slightly wilt. Remove to a serving plate and top with the fresh berries, jicama and toss with a little of the dressing. Top with the feta cheese before serving.
