Creamy Shrimp Fettuccine with Spinach
3 oz. fettuccine
3 T. butter
3/4 lb. large shrimp, peeled and deveined
1/2 C. finely chopped onion
1/2 C. chopped red bell pepper
2 cloves garlic, minced
2 C. fresh baby spinach
1/2 C. whipping cream
2 T. tomato paste
1/2 tsp. dried basil
1/4 tsp. salt
1/4 tsp. pepper
Cook the pasta in salted boiling water till tender. Meanwhile, melt
2 T. butter in a large skillet over med. high heat. Add the shrimp and cook for 2 minutes per side, remove the shrimp to a pate. Add to the skillet the remaining butter, onion and bell pepper and cook for 3 minutes, add the garlic and spinach and cook for 1 minute. Reduce the heat to medium and stir in the cream, tomato paste and seasonings, combine well and cook for 1 minute. Drain the pasta and add to the skillet along with the shrimp. Toss to coat pasta and shrimp and serve with a little parmesan cheese, if desired.
