Old Fashioned Banana Cake


2 med. banana

1/3 C. milk

3/4 C. butter, room temp.

1 C. sugar

1/2 C. brown sugar

3 large eggs

1 1/2 tsp. vanilla extract

3 C. self rising flour, sifted

1/3 C. ground or finely chopped pecans

Puree the bananas in a food processor or blender, add the milk and pulse to combine, set aside. In a mixing bowl add the butter and both sugars. Beat well until nice and fluffy. Add the eggs, 1 at a time and beat well. Add in the vanilla and beat for 1 minute.

Alternately beat in the flour and banana mixture until well combined and smooth. The mixture will seem thick. Stir in the pecans, mix well. Pour the batter into a prepared bundt or tube pan. Bake in a 350 degree oven for 40-45 minutes or until a cake tester comes out clean. Allow to cool in the pan for 10 minutes before turning out.
