Cheesy Chicken & Stuffing


3 C. cooked chicken, cubed or shredded

1 1/2 C. cooked rice

2 T. butter

1 C. chopped onion

1/2 C. chopped red bell pepper

1/4 C. diced celery

8 oz. water chestnuts, drained and chopped

6 oz. box chicken flavored stuffing mix

10.5 oz. cream of chicken soup

1 soup can half & half (use the empty can to measure)

1 1/2 C. shredded sharp cheddar cheese

1 tsp. garlic powder

1/4 tsp. pepper

Add the chicken and rice to a large bowl. Melt the butter over med. high heat and add the onion, pepper and celery. Saute for 5 minutes, add to the chicken mixture. Add the remaining ingredients, using only 1 C. of the cheese. Stir to combine well. Pour into a 3 quart baking dish and bake in a 350 degree oven for 30 minutes. Remove and top with the remaining cheese. Return to the oven for 10 more minutes.
