Ginny's Mac and Cheese


8 oz. elbow macaroni

1 tsp. lard or veg. shortening

1 3/4 C. grated extra sharp cheddar cheese

1/2 C. evaporated milk

2 large eggs, beaten

1 T. mayo

1/2 tsp. prepared mustard

good pinch salt and pepper

Cook the macaroni according to pkg. directions adding the lard or shortening once the water boils. Drain well and add 1 1/2 C. of the cheese and the remaining ingredients. Combine well and pour into an ungreased 8x8 baking dish. Bake in a 350 degree oven for 25 minutes. Remove and top with the remaining cheese and return to the oven until melted.
