Instant Pot (Electric Pressure Cooker) Pulled Pork
4.5 lbs. whole pork tenderloin my all purpose seasoning (2 T. smoked paprika, 1 T. brown sugar, 1 T. salt, 1 T. Adobo seasoning, 1 tsp. pepper...combine and store in an airtight container) 2 T. chili powder 2 T. veg. oil 1 C. water
Rub the tenderloin with a good rubbing of the all purpose seasoning and then rub in the chili powder. Allow to marinate in the fridge for up to 24 hours. Turn the Instant Pot on Saute and allow to heat up for 5 minutes. Add the oil and place the marinated pork loin in the pot and sear for about 3 minutes per side. Turn off the saute and add the water and put the lid on, turning the knob on top to sealing. Press the meat/stew button then increase the time to 125 minutes. Once the time is done, allow it to naturally release the pressure for 10 minutes then turn the knob to venting. Remove the meat, shred with 2 forks and serve with your favorite BBQ sauce
