Cheesy Zucchini Bacon Biscuits

4 strips bacon, cooked and crumbled 3 C. self rising flour 1/2 C. lard 1 C. shredded cheddar cheese 1 1/2 C. grated zucchini 1 1/4 C. milk 2 T. melted butter
In a bowl, add the flour and lard, cut in the lard with a pastry blender or 2 forks until pea size. Using a fork, stir in the cheese, bacon and zucchini. Stir in the milk and combine. With well floured hands, pull the dough together in the bowl. Pinch off a good portion of dough and gently roll it between your palms into a ball and place in a greased iron skillet and lightly flatten just a tad. Bake the biscuits in a 425 degree oven for 16-18 minutes or until lightly golden brown on top. Brush with melted butter before serving.
