Chocolate Chip & Pecan Cookies
(Makes 12-14 cookies) 1/2 C. butter, not margarine, melted 1/2 C. packed light brown sugar 1/3 C. regular sugar 1 large egg 1 tsp. vanilla extract 1 1/2 C. all purpose flour (more may be necessary) 1/2 tsp. baking soda 1/4 tsp. salt 1 C. semi sweet chocolate chips 3/4 C. chopped pecans In a mixing bowl, cream together the melted butter, brown sugar and regular sugar for 2 minutes. Add the egg and vanilla and beat to combine till the egg is well incorporated. Add the flour, baking soda and salt and mix with a wooden spoon. The dough should be dry and just barely stick to your finger when touched, add more flour if necessary to achieve this consistency (humidity makes a difference in the amount of flour used). By hand, mix in the chocolate chips and pecans. Roll the dough into balls and place about 2" apart on a baking sheet lined with parchment paper. Bake in a 350 degree oven for 10-12 minutes or until the edges are lightly browned for chewy cookies, leave in a minute or two longer for crispier cookies. Allow to cool on the baking sheet 5 minutes before removing.
