Aunt Louella's Cottage Cheese Biscuits

1 C. cottage cheese (I used small curd) 1 large egg 1 C. self rising flour 1/2 C. shredded cheddar cheese
In a bowl, whisk together the cottage cheese and egg until well combined. Stir in the flour and the cheese. Using floured hands pull the dough together and pinch off into 6 pieces. Roll them in your hands lightly and place in a greased iron skilled, slightly pressing them into the pan. Bake in a 350 degree oven for 25-28 minutes, brush with a little melted butter after they come out of the oven
