Instant Pot Collard Greens
1 lb. collard greens, washed well and chopped 2 C. chicken broth 1 C. water 1 T. bacon grease pinch red pepper flakes 1/2 lb. pork jowl bacon, thickly sliced salt and pepper to taste good splash of apple cider vinegar
Place the washed collards in the pot. Add the broth, water, bacon grease and red pepper flakes. Press down the collards to make sure they are not in the way of the vent and seal the lid on top. Set the knob to sealing and then manually set the timer for 35 minutes. Once done, allow to naturally release for 10 minutes then move the knob to venting to finish releasing. Season the collards with salt and pepper to taste and a splash of the vinegar.
