Taco Meatloaf


1 lb. ground beef 1 b. ground pork 1 pkg. taco seasoning 4 green onions, chopped 1 T. Worcestershire sauce 15 saltine crackers, crushed 1/4 C. salsa (I used a fire roasted salsa) 1/3 C. ketchup 1/2 tsp. pepper 1 large egg, beaten 4 oz. pepper jack cheese, cut into small cubes (I froze mine a little and then crumbled it in) 4 slices bread 3/4 C. shredded colby jack cheese In a large bowl, add in the ground beef and pork, taco seasoning, onions, worcestershire sauce, crushed crackers, salsa, ketchup, pepper and egg. Use your hands and mix together very well. Add the cubed/crumbled pepper jack cheese and mix again. Place the 4 slices of bread in a square in a deep sided baking dish. Turn the meat mixture out on top of the bread and form the meat into a square on top of the bread. Place in a 375 degree oven for 1 hour, remove and top with the shredded cheese and return to the oven for 5 minutes to melt. NOTE: The baking time will vary depending on how thick you make the meatloaf. Just cut into the center to make sure it is not still pink before serving.
