Crock Pot Mashed Potatoes
5 lbs. russet potatoes, peeled and cubed 3/4 C. chicken broth 1 tsp. my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container) 1 stick of butter 3/4 - 1 C. half & half salt to taste
Place the potatoes, broth and house seasoning in the crock pot, stir, cover and cook on high for 3 hours. Once the potatoes are nice and tender add the stick of butter, cover and cook till melted. Using a hand mixer, beat in 3/4 C. of half and half till the potatoes are nice and creamy, adding more half and half to thin if needed. Season with salt to taste before serving. The potatoes will keep on the low setting for up to 2 hours.
