Cheesy Chicken and Broccoli Casserole
4 C. cooked and shredded chicken (I used thighs) 1 tsp. my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container) 1/2 tsp. smoked paprika 1/3 C. finely chopped onion 10.5 oz. can cream of chicken and mushroom soup (the combined soup, not two soups) 10.5 oz. can cheddar cheese soup 1/2 empty soup can half & half 2 C. shredded cheddar cheese 12 oz. frozen chopped broccoli, thawed 1 sleeve buttery round crackers, crushed 3 T. melted butter Toss the chicken with the seasonings and place in the bottom of a 9x13 casserole dish and then sprinkle the onion over the chicken. Whisk together both soups and the half and half. Pour half of that mixture over the chicken. Sprinkle 1 C. of the cheese over the sauce then top with the broccoli and cover that with the remaining soup mixture. Combine the butter and crackers and sprinkle over the casserole. Cover and bake in a 350 degree oven for 35 minutes. Remove, uncover and top with the remaining cheese. Place back in the oven, uncovered, for 15 minutes.
