BBQ Chicken & Pasta Casserole


3 C. shells pasta, cooked according to pkg. directions. 1 T. butter 1/3 C. chopped onion 1 C. frozen whole kernel corn 2 C. cooked and shredded chicken 10 oz. can diced tomatoes with green chilies 4 oz. can diced green chilies 1/2 C. bbq sauce (I used Sweet Baby Rays) 1/2 C. chicken stock 3 tsp. dry ranch dressing mix 2 C. shredded sharp cheddar cheese


Melt the butter in a small skillet over med. high heat. Add the onion and corn and sauté for 5-6 minutes. Add to a mixing bowl along with the cooked and drained pasta, chicken, diced tomatoes (undrained), and diced green chilies. Whisk together the bbq sauce, chicken stock and dry ranch dressing mix. Add to the bowl along with 1 1/2 C. of the cheese. Combine well and pour into a lightly greased 2 quart baking dish. Top with the remaining cheese. Bake in a 350 degree oven for 30 minutes.
