Brown Sugar Biscuit Peach Cobbler 1/27/23

2 quarts canned peaches, with juice or the equivalent of 4 1/2 C. of peaches 1 C. of the peach juice 1/3 C. brown sugar 2 T. corn starch good pinch of nutmeg pinch of salt
Combine all the ingredients in a pot. Bring up to a boil and cook for 10 minutes, stirring often. If it seems too thick, add a little more juice. Meanwhile, make the topping.
1 1/4 C. self rising flour 1/4 C. brown sugar 1/2 tsp. ground cinnamon 4 T. cold butter 2/3 C. milk
Combine the first 3 ingredients in a bowl. Add the butter and cut it into the flour mixture using a pastry blender or fork till about pea size bits remain. Stir in the milk and combine. Pour the peach mixture into an 8x8 baking dish then drop the biscuits by large spoonsful over the top. Bake in a 375 degree oven for 25 minutes.
