Chicken & Spinach Tortellini Soup 1/9/23


2 T. butter

1 medium onion, chopped

1 large carrot, chopped

1 large rib celery, chopped

2 cloves garlic, minced

8 C. chicken broth

1 tsp. salt

1/2 tsp. dried basil

1/2 tsp. garlic powder

1/4 tsp. smoked paprika

1/4 tsp. pepper

1 1/2 C. cooked and shredded chicken

5 oz. fresh spinach

10 oz. cheese tortellini

2 T. grated parmesan cheese plus more for serving


Melt the butter in a large pot over med. high heat. Add the onion, carrots and celery, cooking for 7-8 minutes. Add the garlic and cook for 1 minute. Stir in the broth and seasonings. Bring to a boil and boil till veggies are tender. Reduce the heat to medium and stir in the chicken, spinach and tortellini, cooking tortellini according to pkg. directions. Stir in the parmesan cheese just before serving and adjust salt and pepper to taste.
