Loaded Breakfast Casserole
1/2 lb. breakfast sausage
6 strips bacon, chopped
1/3 C. chopped onion
15 oz. can diced potatoes, drained
6 large eggs
1/2 C. half & half
1/2 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. smoked paprika
1/4 tsp. pepper
1 1/2 C. shredded cheddar cheese
Brown up the meats and onions in a skillet, drain and set aside to slightly cool. In a large bowl, whisk together the eggs, half & half and seasonings. Stir in the meats and 1 C. of the cheese. Combine well and pour into an 8x8 baking dish. Top with the remaining cheese. Bake in a 350 degree oven for 30-35 minutes.
