Meatloaf Meatballs
2 lbs. ground beef 1 large egg 1 C. milk 1 medium onion, diced 1 1/2 C. panko breadcrumbs 1/4 C. diced green bell pepper 1 garlic clove, minced 1 T. worcestershire sauce 1 tsp. yellow mustard 1/2 tsp. salt 1/2 tsp. pepper 1/2 C. ketchup 1/4 C. brown sugar
In a bowl, combine the first 10 ingredients by hand. Once combined, use a small ice cream scoop to form the meatballs and place (touching) on a baking sheet lined with tinfoil. Bake them in a 350 degree oven for 15 minutes. Meanwhile, mix together the ketchup and brown sugar, set aside. Remove the meatballs after 15 minutes and brush with the sauce. Return to the oven and bake for 20 more minutes. Serve or freeze. Makes approx. 25 meatballs.
