Mushroom and Spinach Pie 3/3/23
1, 9" deep dish pie crust 2 T. butter 8 oz. button mushrooms, roughly chopped 1/3 C. finely chopped onion 1/4 C. finely chopped bell pepper, any color you choose 4 oz. fresh spinach 1 1/2 C. heavy cream 4 large eggs 1/4 tsp. each salt and pepper 1/4 tsp. dry mustard 1 1/2 C. shredded gouda cheese
Poke holes in the pie crust with a fork over the bottom and sides. Prebake in a 400 degree oven for 5 minutes then remove and set aside. Melt the butter in a skillet over medium high heat. Add the mushrooms, onions and peppers. Sauté them for 5 minutes then add the spinach and cook till wilted. Remove from the heat and let cool for 10 minutes. In a mixing bowl whisk the cream, eggs and seasonings. Stir in the veggies and the cheese. Once combined pour this into your pie crust. Bake in a 400 degree oven for 35-40 minutes or until center is set. Allow to rest for 5 minutes before serving.
