Taco Tator Tot Casserole 2/3/23


1 lbs. ground beef 1/2 C. chopped onion 1 pkt. taco seasoning 10 oz. can diced tomatoes with green chilies, undrained 10.5 oz. can fiesta nacho cheese soup (Campbell's makes it) 1/2 C. frozen whole kernel corn 1/2 tsp. garlic powder 3/4 C. shredded cheddar cheese frozen tator tots (approx. 33), no need to thaw


Over medium high heat cook the ground beef and onions till the beef is cooked through. Drain of any grease then stir in the taco seasoning and combine well. Stir in the tomatoes, soup, corn and garlic powder. Cook till bubbling then remove from the heat and pour into a lightly greased 8x8 baking dish. Top with 1/2 C. of the cheese then the tator tots. Bake in a 375 degree oven for 35 minutes. Remove and top with the remaining cheese then place back in the oven for 5 minutes.
