Tortellini Alfredo Skillet 1/25/23


1 lb. frozen or fresh cheese tortellini 2 T. olive oil 1 small onion, chopped 1 lb. mild italian sausage links, cut into 1" pieces 1 T. butter 8 oz. fresh spinach 2 cloves garlic, minced 15 oz. jar alfredo sauce 1 C. shredded mozzarella cheese parmesan cheese for serving


Cook the tortellini according to pkg. directions, drain and set aside. Meanwhile, heat the olive oil in a skillet over medium high heat. Add the onion and sausage and cook till sausage is browned and cooked through. Add the butter to the skillet along with the spinach, lower the heat to medium and cook till spinach has wilted. Add the garlic and cook for about a minute then stir in the alfredo sauce. Cook for a few minutes to warm the sauce. Stir in the tortellini and cheese, cooking till cheese has melted. Serve with a little parmesan cheese on top.
